Depends on what it is
There are different stations, the sushi station is kept cold whereas other seafood such as the fried calamari, coconut shrimp, oysters and cray fish are kept hot. One thing I really like is that their hot food is actually maintained hot. The seafood soup is piping hot. Teppanyaki Grill food is always hot & fresh (or cold when sushi/salad) because it is so popular that dishes are always refilled with freshly cooked/prepped dishes.
