My advice for eating palabok is eat it right away. Eat it fresh. There's too many ingredients mixed together to go wrong. If you're buying grilled food, as long as it's stored properly, it should not be a problem.
Tough question since you didn't eat it right away. I would hope all the food is fresh. Did you store it properly? What time did you buy it?
Honestly, not all the Grill staff are very conscientious about the food they sell. So to answer your concern, they might have not realized the palabok they sold you was starting to spoil. Once we bought the same dish but lacking the usual topping because they ran out! Hope you're feeling better.
