Smoked food is considered to be cooked. The process of "smoking" is one of many methods of Food Preservation. It favors the food while drying the food. Just like other food though, smoked food still needs to be packaged.
All smoked fish is cooked during smooking. You smoke it several hours and that is how uts been done fot years, Tony's or anybody's.
