It's hard to say without asking them. I haven't had any enchiladas there. I usually have the barbaqoa. Why not find out. It's worth the experience. I'm sure it wouldn't be too bad. The food isn't as bad as some of these comments say. Unless your a hard-nosed Mexican who likes to scrutinize Mexican restaurants.... then I wouldn't be of any help. But give it a shot, I promise you won't be completely disappointed. From a scale of 1 to 10 I'd rate the taste a 7, but then I'm really hard to please.

It could be Monterey jack but us is the Oaxaca cheese it easy to melt and it has alot flavor to enchilada, Chile's rellenos, chilaquiles etc.

I don't know what kind a cheese they use. All i know is that they're not authentic enchiladas. Americans are craving for real Mexican food but this isn't real Mexican food. I don't recommend this restaurant not even to my worst enemy.
