Thank you for your question. We do use lard in some bakery items including cinnamon rolls, bread, dinner rolls and pie dough. I hope this is helpful for you.
i'm not the owner or a cook there, and i'm guessing they rarely check these questions, but i can tell you this as a cook for another restaurant; it's good ol fashioned cooking, probably with some amish recipes, i'm pretty sure lard and shortening are more than often used, it's not meant to be good for you, it's just meant to be good. any professional chef can tell you that comfort food isn't going to be healthy, its just meant to taste good. if you want no lard for whatever reason i can tell you it's not even that bad for you, you'd be better off eating that than margarine, or whatever alternative you have to animal fat. if you want health food shop somewhere that's in mind. if you're in rural kansas you're probably a farmer and need the extra nutrients and carbs in fatty foods, the food reflects the people, if you want to eat lithe salads, go to a panera bread, or somewhere meant for that (or just enjoy a good meal made by local friendly faces)
