Right now I have the slack cable from an 18 foot coax stuffed up under the two visors in the truck. If I arrange it just right I will get a good match. 1-1.5. If I move the cable around even a little, the match goes to 2.5-3. What's going on?

It could be a poor ground at the antenna or through the coaxial cable.
