You could try Subway. They'll make any sandwich as a salad without the bread. There's also 9th Street Grill and a new restaurant where the Bistro used to be, across from Baxter Cinema, though I don't know if they serve salad.
I guess it depends on what you want, but Skipper's has a great salad with everything I want on it!
