I own a distillery and restaurant. We close at 10. If you walk in at 9:59 and wNt food, the kitchen is still open weather I like it or not. This isn't a 2 am kast call situation

All establishments that serve alcohol typically have a last call a half hour before the posted closing time. It is bartender discretion to not allow new patrons in during this time. I have been turned away at other establishments. Some even lock the doors. You will just need to arrive during serving hours. The beer equipment requires daily cleaning.

The sampling process takes roughly 30 minutes so My thought is that is why they turned you away....... Too late to take advantage of what they could offer!

I cannot answer this

Didn't know that. Could be that they needed to shut down?
