Our cider is not heat pasteurized. We use a machine called CiderSure that uses ultraviolet light, which maintains the fresh cider flavor. Visit the CiderSure website for more information.
Ohio law requires it to be pasturized but they do a fabulous job managing that process so that their cider doesn't end up tasting more like apple juice than cider.
