If your definition of a lobster roll includes creamy, then you don't know a good lobster roll. It's a lobster roll, not a mayonnaise roll.
A lobster roll, done the proper New England way, shouldn't be "creamy" per see. I've eaten them from Maine to Connecticut, so I feel I know 'em. Some traditional ones can be butter and other areas of NE use mayo, but not a ton of it. Both are great.
