For stuff that is sensitive and can spread sickness when properly mishandled they use gloves. Raw meat and raw eggs and other such things that can have salmonella or other types of raw bacteria inside of them they are required to wear clothes due to the possibilities of spreaded sickness. For stuff like vegetables and other such things, all they need to do is wash their hands and follow a proper regimen on keeping your hands clean and not touching infected surfaces. I worked at Round Table Pizza for a few months and that is what they do. However precooked meat has already have the sickness is killed so therefore it just needs to be kept at a cold temperature. So you are much safer on that front.
I never looked. I don't believe it's mandatory anywhere, for cooks to wear gloves. Unless it's a personal choice.
