Why is it when you find a place that serves excellent baked cod one Fri then by the 4th time, which was a few minutes ago, the food goes from 4 stars to one or two.

Maybe a bad piece of fish. Did you speak to a manager and direct that question ? I certainly would politely let them know you are disappointed. If you don't tell them, they can't fix it

I agree new cook or new product. Sometimes they change the way the do things based on customers feed back

Maybe ,and yes new cooks. @Kurtis Jonesi go what the other person says too ,Devona Bell. It's right, at first it has like 5 stars and then it goes down to 1 or 2 stars.
