Customer service is not dead! Woo hoo! Great assistance from the store manager who suggested a pork shoulder instead of my usual pre-cooked carnitas (from El Burrito Mercado) for a crock of posole. Saved me a trip and gifted me with bacon😜 Really lovely experience in my neighborhood!

I made the best beef bourguignon of my entire life yesterday, and it was all due to the truly exquisite chuck roast I got from here. It was perfectly trimmed, I didn't need to do much at all except cut it into chunks (which were so fall-apart tender even *raw* that I had to really give a good sear to try and hold them together!), and it took a whole hour off the braise time because it got to the tender stage so fast. Perfection!!!

Hey, I have only been here once so I can't really review, but their pork belly has its skin removed. I wanted the skin for a crispy slow roast, but I can't. It's not their fault I didn't ask, I just have to go somewhere else.

That would be interesting, but I've never seen alligator sold there. Most just cow, chicken, pig, lamb, and occasionally other meats. I hear alligator is popular down south, however. ;)

While I highly recommend St Paul meatshop for a delicious lunch and locally sourced meat, I would suggest going to Everets for the dog bones.

They have venison, but I don't know about elk.
I'm not sure if they carry it. But if you call and ask them they can usually get almost any meat product with a little notice
I think they do, but you would have to call and ask them to save them for you.
They do butcher whole lamb, but I don't know if you can bring one to them.
They can get items like lamb liver - I actually asked for lamb kidneys and was told that they were available, but you would have to ask them how quickly items like the liver could become available.

They make and sell corned beef tongue, but not corned beef brisket. They also have an excellent pastrami.
I usually don't see that in the case when I go, but I agree with calling ahead. If they don't have it, they are usually willing to get some and let you know first when it's ready.
