Fantastic sausage especially the wild game, elk is my favorite. Just called the most pleasant gentleman answered assured me that if I drive the 2hrs (checking on my camper also) that they have elk sausage. My go to spot for making a delicious gift basket. Would highly recommend for anyone. Have always been treated great respect when I stop.

Several packages of our ground venison split open and got freezer burned. The vacuum packages of the honey ham sticks were not sealed properly. We had to take them to a friend's house who had a vacuum sealer and repackaged them.

Our sausages are fermented and fully smoked. That said, our sausage (and all sausage) is made with salt, for both flavor and preservative as will as a small amount of sodium Nitrite to ensure they maintain color (not to be confused with sodium nitrate!). If ordering wild game sausage online we have our original recipe available for sale. If your a sportsman and bring to us at our store in rural Mauston, WI. your own wild game meat we can make a wide variety of different flavors. Those options can be viewed on our website

It really depends on the time of year. Once Bow Season Starts and Gun Deer is here it could be a full 4 to 6 months for sausage orders. Cut wrap, grind and freeze could be a little faster. Much faster in the off season if you bring in trim.
