First time at an actual "butcher shop". They were super friendly and helpful. Helped us decide on a few things (tri-tip, some steaks, brats, and chicken kiev). I smoked the tri-tip and grilled the steaks (haven't gotten to brats and chicken yet), and it is seriously some of the best meat that has ever touched my grill. Will be going here weekly from now on to get my meat instead of the grocery store. Couldn't be more pleased.

I'm not sure if they carry those normally, but give them a call. They take special orders.
They have all the core meats. I am not sure what you consider exotic, but they do take special orders for items that aren't in the display or freezer. I would suggest calling them to see what they can get for you.
I only do their pig roasts I would not know about a standing rib roast I'm sure they could order one for you you would have to call and find out their food is five stars
