This is tough. Service was fine, so no real complaints there. Honestly though, I was going to rate this 2 stars for the food and drink. We went for happy hour b/c Vermilion had recently reopened after over 2 years. First up were cocktails that sounded great in concept and tasted like cough syrup in execution. Wine was just adequate. Next up were appetizers to try out the food. Again, they looked good on paper, but were not at all tasty. The combinations of ingredients on all three dishes were awful. If one of the three was good, we might have tried dinner. Obviously, dinner was had elsewhere. I was pulling for Vermilion's comeback, but we will not be back.

For appetizers they have a shaved asparagus salad and a baby kale salad that is a favorite. Also they have a vegetable tasting menu just for vegans. There are other choices on the menu that are vegetarian and can be made vegan if you ask them to remove the yoghurt.
You would need to ask your server for specific menu items, and to see what they can do for substituting on particular dishes
