A smallish stroller, but it'd be bumpy. And there are stairs to go up and down as well, so be prepared to haul it up and down.
You don't need to change the time on your ticket, just arrived and everything will work out
The maze is not scary. It appears that it is primarily targeted at kids. But it is entertaining for adults too. Bring a cell phone with you. There are extra activities in the maze that you can find in addition to just finding your way out.
The maze is three miles of pathways and it's pretty challenging.
This visit was for a maze and band at Halloween.They do have weekend's hours most of the year. Best to check there website as they update.

I was there on a very overcast day, a bit damp. I don't see why rain would stop access. Now, a storm or driving rain would make it unpleasant anyway. A call ahead would likely resolve any lingering questions.
